Ingredients
- 1 medium eggNutrition
- 1 tsp cinnamonNutrition
- 1/2 cup oatsNutrition
- 1/2 cup applesauceNutrition
- 3 medium bananasNutrition
- 1/4 cup pitted, chopped datesNutrition
- 0.12 cup orange juiceNutrition
- 7 tbsps ground milled flax seedNutrition
- 1/2 tsp baking powderNutrition
- 1/2 tsp baking sodaNutrition
- 1/4 cup cornmealNutrition
- 1/2 cup whole wheat flourNutrition
- 1 fl oz skim milkNutrition
Directions
- 1Pre-heat oven to 375 °F (190 °C). Prepare muffin pan.
- 2Mix together dry ingredients. Mash bananas in a separate bowl. Add other ingredients and mix until thoroughly blended.
- 3Add dry ingredients and mix until just blended.
- 4Pour into muffin pan - the muffins will not rise much, so fill to the top.
- 5Bake about 20 minutes (check after 15 minutes). Allow to cool at least 10 minutes.
- 6Enjoy.
