Roast Salmon Provencal
Fat-free Italian dressings adds the zing in this easy and colorful salmon and vegetable creation.

Ingredients
- 1/2 tsp leaves basilNutrition
- 1/2 cup fat free italian dressingNutrition
- 10 small kalamata olivesNutrition
- 1 1/2 cups pieces or slices mushroomsNutrition
- 3 cups diced red potatoesNutrition
- 1 medium zucchini, cut into 1/2" piecesNutrition
- 1 medium red bell pepper, cut into 1" piecesNutrition
- 4 fillets salmonNutrition
Directions
- 1Heat oven to 425 °F (210 °C).
- 2Spray 15x10x1" pan with cooking spray. Place salmon, potatoes, mushrooms, bell pepper and zucchini in pan.
- 3Brush with half of the dressing; sprinkle with basil.
- 4Bake 20 minutes.
- 5Add olives to pan and stir vegetables slightly. Drizzle remaining dressing over salmon and vegetables.
- 6Bake 5 to 10 minutes longer or until fish flakes easily with work and potatoes are tender.
