Mushroom and Barley Stew
A very yummy, vegetarian stew that is easy to prepare and filling.

Ingredients
- 1 dash pepperNutrition
- 1/2 tsp leaves thymeNutrition
- 1 dash saltNutrition
- 3 cups vegetable brothNutrition
- 1 cup chopped carrotsNutrition
- 1 cup chopped celeryNutrition
- 6 cloves garlicNutrition
- 3 cups pieces or slices mushroomsNutrition
- 1 cup chopped onionsNutrition
- 2 large red potatoesNutrition
- 1/3 cup barleyNutrition
Directions
- 1Mix all ingredients in a large pot.
- 2Bring to a boil and lower heat to a simmer.
- 3Cover and cook for 30-45 minutes until vegetables are soft.
- 4Serve with crusty bread.
