Ingredients
- 1 tbsp light butterNutrition
- 4 cups fat free chicken brothNutrition
- 1 tsp black pepperNutrition
- 1 tsp saltNutrition
- 1 tbsp olive oilNutrition
- 1/4 cup chopped celeryNutrition
- 1 cup yellow sweet cornNutrition
- 4 tsps garlicNutrition
- 1 cup pieces or slices mushroomsNutrition
- 1/4 cup chopped onionNutrition
- 1 tbsp parsleyNutrition
Directions
- 1Heat butter and oil in a skillet over medium-high heat.
- 2Add celery, onions, mushrooms and garlic. Sauté 3 minutes or until lightly browned.
- 3Combine vegetable mixture and broth in a large pot; add corn and bring to a boil over medium heat.
- 4Cover, reduce heat, and simmer 30 minutes.
- 5Stir remaining ingredients. Simmer, uncovered, 5 minutes.
- 6Let set overnight in the refrigerator for best taste or serve right away.
