Leek, Broccoli & Cauliflower Soup

Ingredients
- 2 tbsps olive oilNutrition
- 1/2 cup sour creamNutrition
- 1/2 cup 1% milkNutrition
- 3 tbsps butterNutrition
- 4 cups chicken brothNutrition
- 2 cups chopped broccoliNutrition
- 1 cup chopped carrotsNutrition
- 2 cups cauliflowerNutrition
- 3 cloves garlicNutrition
- 2 leekNutrition
- 1 cup pieces or slices mushroomsNutrition
- 1/3 cup green peasNutrition
- 2 cups waterNutrition
Directions
- 1Clean all vegetables and slice leeks into 1" to 1/2" pieces. Chop broccoli and cauliflower. Finely chop garlic cloves.
- 2Heat olive oil and butter in a large stock pot, then saute leeks, garlic, broccoli, cauliflower and carrots for 10 minutes.
- 3Add chicken (or vegetable) broth, plus 2 cups of water to the pot. Add 1/2 cup each of sour cream and 1% milk. Puree soup with a blender or mixer and salt and pepper to taste. Enjoy!!!
- 4Bring to a boil, then simmer for 45 minutes.
