Directions
- 1Heat olive oil in a pot. Cook onions and leeks for 5 minutes, or until glassy.
- 2Add potatoes and stock. Bring to the boil.
- 3Reduce heat, cover and simmer for 20 minutes, or until potato is soft.
- 4Blend. Season with salt and pepper.
- 5Garnish with chives.
