Directions

  1. 1Heat olive oil in a pot. Cook onions and leeks for 5 minutes, or until glassy.
  2. 2Add potatoes and stock. Bring to the boil.
  3. 3Reduce heat, cover and simmer for 20 minutes, or until potato is soft.
  4. 4Blend. Season with salt and pepper.
  5. 5Garnish with chives.
