  1. 1Clean and chop all vegetables into bite size pieces or smaller.
  2. 2Add oil to pan and bring to a medium-high heat. Saute all vegetables starting with the sweet potatoes, carrots, onions and garlic for 7 minutes. Add peppers and cook an additional 7-10 minutes.
  3. 3Add the tomatoes and the rest of the seasonings. Simmer for 5 minutes.
  4. 4Add vegetable broth and kidney beans and bring to a boil, allow to simmer for 20 minutes.
  5. 5Serve adding salt and pepper to taste.
