Ingredients
- 6 tsps garlicNutrition
- 1/2 cup fire roasted crushed tomatoesNutrition
- 1 cup dark red kidney beansNutrition
- 1 1/2 cups chunky tomato sauceNutrition
- 4 cups vegetable brothNutrition
- 4 tbsps chili powderNutrition
- 1 tbsp cuminNutrition
- 2 tsps ground oreganoNutrition
- 1 tbsp olive oilNutrition
- 2 medium carrotNutrition
- 1 5" long sweet potatoNutrition
- 1 small red pepperNutrition
- 1 large yellow pepperNutrition
- 1 oz onionNutrition
- 12 oz kidney beansNutrition
Directions
- 1Clean and chop all vegetables into bite size pieces or smaller.
- 2Add oil to pan and bring to a medium-high heat. Saute all vegetables starting with the sweet potatoes, carrots, onions and garlic for 7 minutes. Add peppers and cook an additional 7-10 minutes.
- 3Add the tomatoes and the rest of the seasonings. Simmer for 5 minutes.
- 4Add vegetable broth and kidney beans and bring to a boil, allow to simmer for 20 minutes.
- 5Serve adding salt and pepper to taste.
