  1. 1Skin the potatoes and chop into bite sized pieces.
  2. 2Put into a pot of water to boil.
  3. 3Cup up the remaining vegetables and add to a large bowl.
  4. 4Boil potatoes until slightly softened. approximately 5 minutes.
  5. 5Add potatoes to the vegetables. Add mustard and olive oil.
  6. 6Stir. Refrigerate for 30 minutes or longer before serving.
