Italian Creamy Pasta

Ingredients
- 1 1/2 oz cheddar cheese, gratedNutrition
- 3 fl oz single creamNutrition
- 1 tbsp fresh basil, choppedNutrition
- 1 clove garlic, peeled and crushedNutrition
- 3 oz broccoliNutrition
- 4 oz mushrooms, slicedNutrition
- 1 tbsp parsley, choppedNutrition
- 1 medium courgette, slicedNutrition
- 5 cherries tomatoesNutrition
- 8 oz linguini pastaNutrition
- 4 oz mange tout (snap peas)Nutrition
- 1 oz vegetable fat spread, reduced calorieNutrition
Directions
- 1Blanch broccoli, mange tout and courgette for 1-2 minutes; drain.
- 2Heat the spread in frying pan and sauté garlic and mushrooms for 2-3 minutes. Add cherry tomatoes and parsley.
- 3Cook over medium heat for a couple of minutes.
- 4Cook linguini in boiling salted water until just tender (al dente).
- 5Drain and mix with the vegetables, cheddar and cream.
- 6Heat gently and serve with salad and garnish with fresh basil.
