A nice lighter side dish to grilled items. Can even be tossed with pasta.

Directions
- 1In a medium saucepan, add all ingredients except butter.
- 2Simmer on low-medium heat until onions and zucchini are cooked but firmer in texture. Approximately 15 minutes but don't over cook.
- 3When ready to serve mix in the butter.
- 4Serve in small bowls because you want to get all the juice too which has great flavor!
