A nice lighter side dish to grilled items. Can even be tossed with pasta.

  1. 1In a medium saucepan, add all ingredients except butter.
  2. 2Simmer on low-medium heat until onions and zucchini are cooked but firmer in texture. Approximately 15 minutes but don't over cook.
  3. 3When ready to serve mix in the butter.
  4. 4Serve in small bowls because you want to get all the juice too which has great flavor!
