Italian Peasant Soup

Ingredients
- 1/2 cup parmesan cheeseNutrition
- 1 tsp leaves basilNutrition
- 1 tsp leaves oreganoNutrition
- 1 cup grated carrotsNutrition
- 60 oz chicken brothNutrition
- 16 oz italian turkey sausageNutrition
- 6 cloves garlicNutrition
- 2 medium onionsNutrition
- 6 cups spinachNutrition
- 14 1/2 oz diced tomatoes with green chiliesNutrition
- 30 oz cannellini beansNutrition
- 10 oz whole wheat penneNutrition
Directions
- 1In a large pot, cook sausage over medium heat until browned and no longer pink; drain.
- 2Add onions and garlic; sauté until tender.
- 3Add in the beans, broth, tomatoes, carrots, basil, and oregano; stir to mix. Cook uncovered for 10 minutes.
- 4Add the spinach and heat just until wilted.
- 5Add the cooked penne noodles last.
- 6Serve with parmesan cheese sprinkled on top.
