Ingredients
- 1/2 large diced red bell pepperNutrition
- 1/2 large diced green bell pepperNutrition
- 3/4 cup sliced yellow squashNutrition
- 1/2 tsp ground basilNutrition
- 2 tsps balsamic vinegarNutrition
- 2 tsps minced garlicNutrition
- 1 cup pieces or slices mushroomNutrition
- 3/4 cup chopped zucchiniNutrition
- 1 small whole roma tomatoNutrition
- 2 fl oz waterNutrition
- 2 Italian tomatoesNutrition
Directions
- 1Cut vegetables into small bite size pieces.
- 2Spray pan with cooking spray (like Pam).
- 3Sauté minced garlic over medium heat for 30 seconds or so.
- 4Add vegetables, seasonings, water and balsamic vinegar.
- 5Stir to coat vegetables.
- 6Cover pan with lid and steam for 10-15 minutes until just tender. Stir occasionally.
