Walnut & Dried Cherry Bars

Ingredients
- 3/4 cup whole wheat flourNutrition
- 3/4 cup dried tart cherriesNutrition
- 1 large eggNutrition
- 1 large egg whiteNutrition
- 1/4 tsp ground cinnamonNutrition
- 1/4 tsp saltNutrition
- 1/4 cup canola oilNutrition
- 1/4 cup toasted wheat germNutrition
- 1 cup oatsNutrition
- 1/3 cup unsweetened applesauceNutrition
- 4 tbsps fruit preservesNutrition
- 1/2 cup chopped walnutsNutrition
- 1/2 cup honeyNutrition
Directions
- 1Preheat oven to 350 °F (175 °C).
- 2In a medium bowl, whisk together the oats, flour, wheat germ, cinnamon and salt.
- 3In another bowl, whisk together the honey, applesauce, oil, egg and egg white until well combined.
- 4Stir in the oatmeal mixture until well combined. Add the dried cherries and walnuts.
- 5Coat an 8" square baking pan with cooking spray.
- 6Spread the mixture into the prepared pan and bake until a toothpick inserted in the center comes out clean, 30 to 35 minutes.
- 7Put the preserves in a small saucepan and bring to a boil. As soon as the bars come out of the oven, brush with the preserves.
- 8Cool completely and cut into 12 bars, about 4 by1 1/2" each.
