Walnut Streusel Muffins
These muffins are incredible, but best warmed before eating.

Ingredients
- 1 cup sour creamNutrition
- 3 medium eggsNutrition
- 2 tbsps butterNutrition
- 1 tsp cinnamonNutrition
- 1/2 tsp saltNutrition
- 1 tsp vanilla extractNutrition
- 1 cup chopped walnutsNutrition
- 12 oz protein powderNutrition
- 1 tsp baking sodaNutrition
- 4 oz soft butter, lightNutrition
- 1/4 cup whole psyllium husksNutrition
- 12 oz surcroloseNutrition
Directions
- 1In large bowl or a food processor, combine the sweetener, butter and vanilla. Mix for one minute.
- 2Add eggs and combine until smooth.
- 3Add dry ingredients, including the psyllium husks and mix well.
- 4Stir in half the walnuts and sour cream.
- 5Spoon batter into greased or non-stick muffin pans, leaving room to add a tablespoon of the topping.
- 6For topping add remaining walnuts, 1/4 cup of Sucralose, cinammon and soft butter.
- 7Combine topping ingredients in a small bowl and mix until smooth using a wooden spoon or a spatula. Add a tablespoon of mixture to the top of each muffin
- 8Bake on the bottom rack of the oven for 15 minutes.
