Ingredients
- 4 tbsp light buttery spreadNutrition
- 1/2 cup chopped walnutsNutrition
- 1 1/2 cups dry oatmealNutrition
- 1/3 cup sugarNutrition
- 1/2 tsp cinnamonNutrition
- 1/2 cup sweetened dried cranberriesNutrition
- 1 tsp pumpkin pie spiceNutrition
- 1/4 tsp saltNutrition
- 1 tsp vanilla extractNutrition
- 1 tsp orange zestNutrition
- 1/2 tsp baking sodaNutrition
- 1/2 cup brown sugarNutrition
- 3/4 cup flourNutrition
- 1/4 cup mashed bananaNutrition
Directions
- 1Pre-heat oven to 350 °F (175 °C).
- 2Combine buttery spread and sugars and beat on high till light and fluffy - about 3 minutes.
- 3Add mashed banana and vanilla, mix well.
- 4Combine flour, baking soda, salt, spices in a separate bowl.
- 5Add to butter and sugar mixture and combine on low.
- 6Fold in oats, cranberries and walnuts.
- 7Place rounded tablespoonsful of dough on pan, spaced evenly and bake for 10-12 minutes.
- 8Cool on pan for 10 minutes. Cookies will be soft and chewy.
