Ingredients
- 1 1/2 tsps basil leavesNutrition
- 1 dash black pepperNutrition
- 1 tbsp vegetable oilNutrition
- 4 boneless skinless chicken breasts cut into 1" piecesNutrition
- 1 peeled eggplant, cut into 1" cubesNutrition
- 1 clove garlic, mincedNutrition
- 1 medium onion, thinly slicedNutrition
- 1 tbsp parsley, mincedNutrition
- 1 medium green pepper, cut into 1" piecesNutrition
- 2 large zucchini, thinly slicedNutrition
- 16 oz tomatoesNutrition
- 1/2 lb mushrooms, slicedNutrition
Directions
- 1Heat oil in large nonstick skillet. Add chicken and sauté for about 3 minutes or until lightly browned.
- 2Add zucchini, eggplant, onion, green pepper, and mushrooms. Cook for about 15 minutes, stirring occasionally.
- 3Add tomatoes, garlic, basil, parsley, and pepper. Stir and continue to cook for about 5 minutes or until chicken is tender.
