Shrimp and Vegetable Pasta

Ingredients
- 8 g fat free parmesan cheeseNutrition
- 1 tsp leaves basilNutrition
- 1 tsp leaves oreganoNutrition
- 1 tbsp parsleyNutrition
- 1 tbsp olive oilNutrition
- 2 tbsps margarineNutrition
- 1 cup chopped broccoliNutrition
- 8 large mushroomsNutrition
- 1 cup chopped mixed bell peppersNutrition
- 32 medium shrimpNutrition
- 8 oz wheat pastaNutrition
Directions
- 1Cook pasta as per package instructions.
- 2Cook shrimp in a separate skillet or bake in oven (if not precooked).
- 3In a skillet, heat olive oil and sauté mushrooms and broccoli.
- 4Add peppers and stir. Vegetables should be crisp but cooked. Add basil and oregano.
- 5When pasta is cooked, drain well and return to pot.
- 6Add margarine and stir.
- 7Portion pasta to plates, spoon out the vegetables and shrimp and sprinkle with parmesan cheese. Add parsley.
