Lettuce Wrappers with Shrimp

Ingredients
- 1 tbsp rice vinegarNutrition
- 1 tbsp peanut oilNutrition
- 1/2 tbsp hoisin sauceNutrition
- 1/2 cup chopped celery stalksNutrition
- 1 tsp garlicNutrition
- 1 tsp fresh gingerNutrition
- 8 leaf large lettuce leavesNutrition
- 1/4 cup slices waterchestnutsNutrition
- 1/4 cup peanutsNutrition
- 1 tbsp soy sauceNutrition
- 1 lb large shrimpNutrition
Directions
- 1In nonstick 12" skillet or wok, heat oil over medium-high heat until very hot.
- 2Add shrimp and cook 2 minutes or just until opaque throughout, stirring constantly. With slotted spoon, transfer shrimp to medium bowl.
- 3To same skillet, add celery, water chestnuts, garlic, and ginger, and cook 2 minutes, until celery is tender-crisp, stirring.
- 4Return shrimp to skillet; stir in hoisin sauce, soy sauce, and vinegar. Cook 1 minute or just until mixture is heated through. Remove skillet from heat.
- 5Evenly divide shrimp mixture among lettuce leaves. Sprinkle with peanuts.
