Shrimp with Zucchini
This meal goes together quickly using pre-cooked shrimp, and is also yummy over pasta.

Directions
- 1Heat olive oil in fry pan.
- 2Add chopped onion and minced garlic cloves. Cook until softened.
- 3Peel zucchini and slice lenghwise, then slice into 1/4" slices. Add to onion and garlic mixture. Cook until tender-crisp.
- 4Add sliced mushrooms and cook until soft. Then add thawed cooked shrimp. Heat only until shrimp is hot.
- 5Top with cheese and serve with green salad.
- 6Note: great for Phase 2 and 3 of South Beach.
