Shrimp with Zucchini

This meal goes together quickly using pre-cooked shrimp, and is also yummy over pasta.

Directions

  1. 1Heat olive oil in fry pan.
  2. 2Add chopped onion and minced garlic cloves. Cook until softened.
  3. 3Peel zucchini and slice lenghwise, then slice into 1/4" slices. Add to onion and garlic mixture. Cook until tender-crisp.
  4. 4Add sliced mushrooms and cook until soft. Then add thawed cooked shrimp. Heat only until shrimp is hot.
  5. 5Top with cheese and serve with green salad.
  6. 6Note: great for Phase 2 and 3 of South Beach.
