- 3 cloves garlic, mincedNutrition
- 3/4 cup chopped green onionsNutrition
- 1 cup chopped green pepperNutrition
- 4 cups v8 juiceNutrition
- 1 cup chopped red pepperNutrition
- 1 cup waterNutrition
- 1 1/3 lbs shrimp, peeledNutrition
- 3/4 cup long-grain white riceNutrition
- 15 oz black beans, cannedNutrition
Directions
- 1Sauté peppers, onions, and garlic in melted butter over medium heat until tender for about 6 minutes.
- 2Add the juice, water, and seasonings and bring to a boil.
- 3Stir in the rice and beans. Cover and simmer for 18 minutes.
- 4Add shrimp (deveined, tails removed, and cut into two pieces) and cook for 6 minutes.
