  1. 1Cut orange rind into thin strips.
  2. 2Combine ingredients (except for duck and spring onions) in a saucepan and bring to the boil. Boil for about 10 minutes, until syrupy.
  3. 3Prick duck skin well and sear breasts, skin side down for about 8 minutes.
  4. 4Turn and cook for another 8 minutes – allow to rest.
  5. 5Cut duck into thin slices and serve on Asian noodles.
  6. 6Sprinkle with spring onions and pour orange sauce over.
