- 1Mix broccoli, cauliflower, the mixed vegetables, mushrooms, and the cream of mushroom soup (fat free if available) in a large mixing bowl.
- 2Put half of the mixture on the bottom of a baking pan.
- 3Put all of the soy cheese in the middle, then place the rest of the vegetable mixture on top.
- 4Bake casserole for 45 minutes at 350° F (175° C) and enjoy after letting it rest for 10 minutes.
