Vegetable Bean Soup
Very easy to make soup... my boyfriend loved it!

Ingredients
- 1/2 tbsp ground pepperNutrition

- 2 tsps olive oilNutrition
- 1 cube vegetable brothNutrition
- 2 medium carrots, slicedNutrition
- 2 stalks medium celeryNutrition
- 2 cloves garlicNutrition
- 1 cup sliced onionsNutrition
- 1 can tomatoes, dicedNutrition
- 1 cup waterNutrition
- 1 cup kidney beansNutrition
- 1 cup white beansNutrition
- 1/2 g fresh cilantroNutrition
Directions
- 1Heat the oil in a large saucepan over medium heat.
- 2Add celery, carrot, onion, and garlic (optional). Cook, stirring occasionally until softened, about 10 minutes.
- 3Stir in the tomatoes, kidney beans (rinsed and drained), white beans (rinsed and drained) and prepared vegetable broth (water and cube); bring to a boil.
- 4Reduce the heat and simmer, covered, stirring occasionally, until the flavors are blended, about 30 minutes.
- 5Add cilantro, salt and pepper; cook, stirring occasionally, about 5 minutes.
