Very easy to make soup... my boyfriend loved it!

  1. 1Heat the oil in a large saucepan over medium heat.
  2. 2Add celery, carrot, onion, and garlic (optional). Cook, stirring occasionally until softened, about 10 minutes.
  3. 3Stir in the tomatoes, kidney beans (rinsed and drained), white beans (rinsed and drained) and prepared vegetable broth (water and cube); bring to a boil.
  4. 4Reduce the heat and simmer, covered, stirring occasionally, until the flavors are blended, about 30 minutes.
  5. 5Add cilantro, salt and pepper; cook, stirring occasionally, about 5 minutes.
