  1. 1Preheat oven to 400 °F (200 °C). Add one tablespoon of olive oil to skillet, and add package of spinach. Cook until wilted.
  2. 2Squeeze water out of spinach in a clean towel and set aside.
  3. 3Add the other tablespoon of olive oil to skillet and sauté onions, mushrooms, add garlic until soft. Add ham chopped into cubes.
  4. 4Add spinach and incorporate all ingredients together.
  5. 5Scramble egg (with a splash of milk) and pour over spinach and vegetables. Turn heat down and let cook until egg starts to get solid at the top.
  6. 6Remove from heat, sprinkle parmesan cheese and cheddar cheese and put in the oven for 5-7 minutes. Remove when bubbly and brown.
