  1. 1Slice mushrooms, chop bell pepper and red onion.
  2. 2In medium skillet combine turkey sausage, onion and bell peppers, cook over medium heat until all pink is gone. Reduce heat to low.
  3. 3In mixing bowl combine 6 large eggs and a dash of half and half, briskly whisk until combined. Pour mixture into skillet and add the sliced mushrooms.
  4. 4Cook on low for 10 minutes or until edges appear firm, transfer to oven and cook for 5 minutes or until apppears done. Remove from oven.
  5. 5Grate the parmesan cheese, sprinkle on top and enjoy!
  6. 6Great for South Beach diet.
