Directions

  1. 1Sauté chopped onion and sliced celery until nearly done.
  2. 2Add pepper pieces and continue cooking for several minutes.
  3. 3Add sausage and diced tomatoes. Add tomato sauce and vegetable juice (like V-8). Simmer for 15 to 20 minutes.
  4. 4Serve over spaghetti squash.
  5. 5Note: canned kidney beans are optional but do add a great deal of flavor.
