Sausage Gumbo

Ingredients
- 2 tbsps olive oilNutrition
- 0.12 tsp hot sauceNutrition
- 6 links, 4/lb pork sausageNutrition
- 3 stalks medium celeryNutrition
- 1/3 cup chopped onionNutrition
- 1/4 cup chopped green pepperNutrition
- 3/4 cup cubed spaghetti squashNutrition
- 4 small whole tomatoesNutrition
- 0.12 cup tomato sauceNutrition
- 3/4 cup vegetable juiceNutrition
- 1/4 cup chopped red pepperNutrition
Directions
- 1Sauté chopped onion and sliced celery until nearly done.
- 2Add pepper pieces and continue cooking for several minutes.
- 3Add sausage and diced tomatoes. Add tomato sauce and vegetable juice (like V-8). Simmer for 15 to 20 minutes.
- 4Serve over spaghetti squash.
- 5Note: canned kidney beans are optional but do add a great deal of flavor.
