  1. 1Spray cooking spray like Pam on a large skillet, and then add tablespoon of olive oil. Preheat oven to 375 °F (180 °C).
  2. 2Season the pork cubes with salt and pepper (to taste) and sprinkle on the cumin. Brown the pork cubes until done.
  3. 3In another skillet sauté the rest of the ingredients for about 5 minutes stirring frequently.
  4. 4Next, transfer the veggies and fruits to the pan with the pork loins and stir until well mixed.
  5. 5Serve with some brown or natural wild rice and other vegetables.
