- 1Spray cooking spray like Pam on a large skillet, and then add tablespoon of olive oil. Preheat oven to 375 °F (180 °C).
- 2Season the pork cubes with salt and pepper (to taste) and sprinkle on the cumin. Brown the pork cubes until done.
- 3In another skillet sauté the rest of the ingredients for about 5 minutes stirring frequently.
- 4Next, transfer the veggies and fruits to the pan with the pork loins and stir until well mixed.
- 5Serve with some brown or natural wild rice and other vegetables.
