Spinach and Chicken Soup

Ingredients
- 1 dash pepperNutrition
- 1/2 tsp saltNutrition
- 6 cups chicken broth, low sodiumNutrition
- 1 cup chopped spring onionsNutrition
- 12 oz chicken breast meat, juliennedNutrition
- 3 oz mushrooms, dried and choppedNutrition
- 6 cups fresh spinach, trimmed and slicedNutrition
- 1 medium whole tomato, halved, seeded and dicedNutrition
- 1 cup waterNutrition
- 4 oz dry bow tie pastaNutrition
Directions
- 1Combine broth, water and scallions to boil in a pot.
- 2Add the pasta and bring mixture to a full boil.
- 3Reduce heat to low, cover and simmer for 5 minutes.
- 4Add spinach and mushrooms, mix well, bring back to strong boil and cook for 1 minute.
- 5Add chicken meat, separating pieces; salt and pepper. Mix well and return to a boil.
- 6Cover and set aside off the heat for 5 minutes.
- 7Add tomatoes, stir and serve immediately.
