- 1Drain spinach really well. You can use a potato ricer.
- 2Put all ingredients in a bowl and mix well.
- 3Spray skillet with cooking spray (such as Pam) or olive oil.
- 4Flatten the spinach mix in the pan.
- 5Cook for 8-10 minutes on medium heat.
- 6If needed, garnish with low fat ranch dressing.
