  1. 1Heat the pan with olive oil or butter.
  2. 2Sauté onions till tender, then add spinach and sauté until soggy.
  3. 3Add enchilada sauce or pato tomato sauce depending on your taste.
  4. 4Scramble in the 2 egg whites until done.
  5. 5Salt and pepper to taste.
  6. 6Note: if permitted by your diet you can even add cheese.
