Spinach Frittata
An easy Frittata or egg pizza with just a few ingredients.

- 1In large frying pan, sauté spinach in olive oil. Spread spinach evenly over the pan.
- 2Mix cream and eggs. (You can substitute milk for cream).
- 3Pour egg mixture over spinach.
- 4Cook over low heat until eggs are firm, or cook in the oven.
- 5After eggs are firm, flip the eggs and spinach 'crust' over in the frying pan.
- 6Add tomatoes and feta cheese.
- 7Cover frying pan over low heat until tomatoes and cheese are warm. Cut into four slices and serve.
- 8Note: for variety use salsa and shredded cheddar instead of tomatoes and feta.
