Spinach Frittata

An easy Frittata or egg pizza with just a few ingredients.

  1. 1In large frying pan, sauté spinach in olive oil. Spread spinach evenly over the pan.
  2. 2Mix cream and eggs. (You can substitute milk for cream).
  3. 3Pour egg mixture over spinach.
  4. 4Cook over low heat until eggs are firm, or cook in the oven.
  5. 5After eggs are firm, flip the eggs and spinach 'crust' over in the frying pan.
  6. 6Add tomatoes and feta cheese.
  7. 7Cover frying pan over low heat until tomatoes and cheese are warm. Cut into four slices and serve.
  8. 8Note: for variety use salsa and shredded cheddar instead of tomatoes and feta.
