  1. 1Cover the bottom of a 13"x9" pan or something similar in dimension with a thin layer of salsa.
  2. 2Fill each tortilla with the spinach, soy cheese, tomatoes, onions, and mushrooms and place them in the pan.
  3. 3Cover the enchiladas with another layer of salsa or enchilada sauce.
  4. 4Let the enchiladas bake for 35 minutes at 350° F (175° C). Take the enchiladas out and finish putting the rest of your soy cheese on top and bake for an additional 10 minutes.
  5. 5Let the enchiladas rest for about 10 minutes, then enjoy it with a nice crisp salad on the side.
