  1. 1Pre-heat oven to 375° F (200° C).
  2. 2Thaw, rinse and dry frozen spinach.
  3. 3Mix together 2 eggs and one egg white. Mix in cottage cheese, tomatoes (drained), spinach, and about half of the mozzarella cheese. Add Italian seasonings if desired.
  4. 4Put mix in pie pan or 8x8" pan lightly sprayed with cooking spray (like Pam).
  5. 5Place dish in oven for about 12-15 minutes, then top with remaining cheese and heat for an additional 2-3 minutes.
  6. 6Let cool slightly before serving.
