- 1Pre-heat oven to 375° F (200° C).
- 2Thaw, rinse and dry frozen spinach.
- 3Mix together 2 eggs and one egg white. Mix in cottage cheese, tomatoes (drained), spinach, and about half of the mozzarella cheese. Add Italian seasonings if desired.
- 4Put mix in pie pan or 8x8" pan lightly sprayed with cooking spray (like Pam).
- 5Place dish in oven for about 12-15 minutes, then top with remaining cheese and heat for an additional 2-3 minutes.
- 6Let cool slightly before serving.
