Ingredients
- 1 tbsp crumbled bay leafNutrition
- 1/2 tsp black pepperNutrition
- 1/2 tsp thymeNutrition
- 1 tsp vegetable oilNutrition
- 3 cups chicken brothNutrition
- 1 1/2 lbs chicken breastNutrition
- 1 cup chopped carrotsNutrition
- 1/2 medium carrot, gratedNutrition
- 1/4 cup chopped celeryNutrition
- 4 cloves garlic, mincedNutrition
- 1 cup okra, slicedNutrition
- 2 medium scallions, choppedNutrition
- 1 cup diced white potatoesNutrition
- 1 jalapeno pepperNutrition
- 1/4 cup flourNutrition
Directions
- 1Add oil to large pot and heat over medium flame.
- 2Stir in flour. Cook, stirring constantly, until flour begins to turn golden brown.
- 3Slowly stir in all broth using wire whisk. Cook for 2 minutes. Broth mixture should not be lumpy.
- 4Add rest of ingredients except okra. Bring to boil, then reduce heat and let simmer for 20–30 minutes.
- 5Add okra and let cook for 15–20 more minutes.
- 6Remove bay leaf and serve hot in bowl or over rice.
