Baked Sweet Onion Omelet

Easy, low calorie baked omelet that even my kids love.

Directions

  1. 1Pre-heat oven to 400° F (200° C).
  2. 2Cut bacon into pieces and fry in a pan.
  3. 3Cool cooked bacon on a paper towel.
  4. 4Mix all ingredients together except for the sour cream when the bacon is cool.
  5. 5Spray a 12x12" baking pan with non-stick spray, then pour the egg mixture into the pan.
  6. 6Bake eggs for 35 - 45 minutes, or until firm and slightly brown on top.
  7. 7Cut eggs into 6 pieces and serve with sour cream on top.
