Baked Sweet Onion Omelet

Directions
- 1Pre-heat oven to 400° F (200° C).
- 2Cut bacon into pieces and fry in a pan.
- 3Cool cooked bacon on a paper towel.
- 4Mix all ingredients together except for the sour cream when the bacon is cool.
- 5Spray a 12x12" baking pan with non-stick spray, then pour the egg mixture into the pan.
- 6Bake eggs for 35 - 45 minutes, or until firm and slightly brown on top.
- 7Cut eggs into 6 pieces and serve with sour cream on top.
