Spaghetti Squash with Turkey Meat Sauce

A surprisingly good meal that will make you forget you're dieting.

  1. 1Cook squash in oven until soft. Remove from oven and use fork to make "spaghetti".
  2. 2While squash is cooking in the oven, puree tomatoes. Then put into medium sauce pan with fennel and heat on low for about 20 minutes.
  3. 3In a non-stick skillet, sauté garlic, onions and mushrooms until onions are soft. Then add ground turkey and coriander and cook thoroughly.
  4. 4Add the ground turkey mixture to the tomato sauce pan and let simmer for another 4-5 minutes.
  5. 5Put "spaghetti" on plate and pour sauce on top.
  6. 6Enjoy!
