Warm Lamb Salad with Black Olives

Ingredients
- 15 g butterNutrition
- 1/4 cup balsamic vinegarNutrition
- 10 spears medium asparagus, chopped coarselyNutrition
- 1 clove garlic, crushedNutrition
- 1/4 cup olive oilNutrition
- 25 g black olives, slicedNutrition
- 150 g button mushrooms, quarteredNutrition
- 200 g red capsicum, chopped coarselyNutrition
- 80 g baby rocket leavesNutrition
- 500 g lamb filletNutrition
Directions
- 1In a large non-stick fry pan cook lamb until brown and cooked as desired.
- 2Slice lamb and combine it with garlic, vinegar, oil and olives in a large bowl.
- 3Heat butter in pan and cook asparagus, capsicum, mushrooms, stir until asparagus is tender.
- 4Add to lamb mixture in the bowl and toss gently.
- 5Serve lamb mixture with rocket.
- 6Note: you can use lamb cutlets, chops or fillets.
