Warm Lamb Salad with Black Olives

  1. 1In a large non-stick fry pan cook lamb until brown and cooked as desired.
  2. 2Slice lamb and combine it with garlic, vinegar, oil and olives in a large bowl.
  3. 3Heat butter in pan and cook asparagus, capsicum, mushrooms, stir until asparagus is tender.
  4. 4Add to lamb mixture in the bowl and toss gently.
  5. 5Serve lamb mixture with rocket.
  6. 6Note: you can use lamb cutlets, chops or fillets.
