Warm Salsa Dip

Mexican flavors that go well as a dip or topping for quesadillas, tortilla chips or tacos.

  1. 1Heat oil in a sauté pan over medium heat.
  2. 2Add salsa and allow the onions and garlic to simmer in the liquid.
  3. 3Add tomatoes, cilantro stems, coriander, cumin, and salt.
  4. 4Allow to simmer until the tomatoes soften and basically melt into the sauce.
  5. 5Transfer to a blender (or use a hand immersion blender) and puree until you reach the consistency of pea soup or thick tomato sauce.
  6. 6Transfer to a bowl and garnish with cilantro leaves.
  7. 7Note: would also work well as enchilada sauce or a base for vegetarian Spanish rice.
