Warm Chicken with Couscous Salad
Simple and very quick Moroccan-style salad.

Ingredients
- 3 tbsps fresh mintNutrition
- 1 tbsp pumpkin oilNutrition
- 1 tbsp lemon juiceNutrition
- 3 1/2 oz dried apricotsNutrition
- 1 chicken, bone and skin removed roasted chickenNutrition
- 1 1/4 cups vegetable stockNutrition
- 1/2 cucumberNutrition
- 4 medium spring onionsNutrition
- 2 tbsps fresh parsleyNutrition
- 1 medium red pepperNutrition
- 2 oz pumpkin seedsNutrition
- 1 tbsp vegetable fat spread, lightNutrition
- 10 1/2 oz couscousNutrition
Directions
- 1Chop the chicken into bite-sized pieces and dice the dried apricots. Finely chop the herbs.
- 2Prepare the couscous by placing in a large bowl and pouring over the boiling stock.
- 3Cover and leave for 10 minutes and then stir in the herbs, seeds, the spread, pumpkin oil and lemon juice.
- 4Toss together with all remaining ingredients and garnish with fresh herbs.
