Sweet Crab Corn Chowder

Ingredients
- 1 tbsp extra virgin olive oilNutrition
- 1 tbsp churn style butterNutrition
- 1 1/4 cups fat free crab delightNutrition
- 1/2 cup half and halfNutrition
- 1 dash nutmegNutrition
- 1 tbsp sea saltNutrition
- 1/2 tsp onion powderNutrition
- 1 tsp white pepperNutrition
- 4 cups chicken brothNutrition
- 1 leekNutrition
- 3 medium potatoesNutrition
- 1/2 cup canned sweet cornNutrition
Directions
- 1Wash and chop white part of leek.
- 2Sauté leeks in olive oil and butter until tender. Sprinkle with a pinch of salt. Approximately 5 minutes.
- 3Add corn and a little of the juice from can.
- 4Chop potatoes into bite sized pieces. Add to pot.
- 5Slowly add broth until potatoes are tender. Add any remaining broth. Stir in crab delight.
- 6Season with salt, pepper, onion powder. Stir in half and half. Heat to desired temperature.
- 7Sprinkle with a pinch of nutmeg.
