Baked Mediterranean Meatballs

Tasty and filling, this makes a quick supper dish for all the family to enjoy.

  1. 1In a large bowl, combine the minced beef, breadcrumbs, finely chopped onion, oregano and pepper. Add the eggs and mix together well until combined.
  2. 2Using a dessert spoon or hands, shape into 16 evenly sized meatballs. It will be a good idea to dust your hands with cornflour at this point to prevent sticking.
  3. 3Heat the olive oil in a pan, and brown the meatballs all over. Remove from heat and drain if necessary.
  4. 4Place the meatballs in an ovenproof dish, then pour the rest of the ingredients over the top. Place in a pre-heated oven 360 °F (180 °C) for about 40 minutes.
  5. 5Serve with a fresh salad if dieting, or with fresh bread, rice and pasta for the rest of the family.
