Ingredients
- 1 tbsp canola oilNutrition
- 2 cups tomato sauceNutrition
- 1 cup whole kernel cornNutrition
- 1 tbsp chili powderNutrition
- 1 tsp cuminNutrition
- 1/4 tsp red or cayenne pepperNutrition
- 1/4 tsp saltNutrition
- 2 cups pieces or slices mushroomsNutrition
- 2 cups chopped onionsNutrition
- 1 cup chopped green pepperNutrition
- 14 oz canned stewed tomatoesNutrition
- 19 oz canned black beansNutrition
- 14 oz canned red kidney beansNutrition
Directions
- 1Heat cooking oil in large saucepan or Dutch oven on medium-high.
- 2Add onions, mushrooms and green pepper.
- 3Cook, uncovered, for about 5 minutes, stirring often, until onion is softened.
- 4Add remaining ingredients. Stir. Bring to a boil.
- 5Reduce heat to medium-low. Simmer, covered, for 10 minutes, stirring occasionally to blend flavors.
