Ingredients
- 3 cups cubed sweet potatoNutrition
- 411 g diced canned tomatoesNutrition
- 2 cups baby spinachNutrition
- 2 medium green onionsNutrition
- 1/4 tsp cinnamonNutrition
- 2 tsps curry powderNutrition
- 439 g garbanzo beansNutrition
- 1/2 tsp cuminNutrition
- 10 sprigs cilantroNutrition
- 1 cup waterNutrition

Directions
- 1Peel and dice sweet potatoes. Steam for 15 minutes.
- 2In a large pot, put chickpeas, tomatoes, water, and vegetable base. Bring to simmer over medium heat.
- 3Add spinach and cook for about 3 minutes or until wilted.
- 4Add steamed sweet potatoes, green onions, cilantro and spices. Simmer uncovered for 5 minutes.
