An extremely simple lentil dish which is very good over rice.

Directions

  1. 1Sauté the onions in a small amount of the broth and the lemon juice.
  2. 2When the onions are translucent and fragrant, add the curry powder and lentils and sauté for another minute or so.
  3. 3Add the rest of the ingredients and simmer until the vegetables are cooked.
  4. 4Adjust the amount of curry to taste.
  5. 5Serve over long grain rice.
