Curried Lentils
An extremely simple lentil dish which is very good over rice.

Directions
- 1Sauté the onions in a small amount of the broth and the lemon juice.
- 2When the onions are translucent and fragrant, add the curry powder and lentils and sauté for another minute or so.
- 3Add the rest of the ingredients and simmer until the vegetables are cooked.
- 4Adjust the amount of curry to taste.
- 5Serve over long grain rice.
