Turkey Bacon and Vegetable Frittata

Directions

  1. 1Cook bacon, set aside. Grate zucchini.
  2. 2Sauté onions in oil, add shredded zucchini and spinach and cook until wilted. Pour into 8" pan.
  3. 3Mix eggs, egg whites, salt, pepper, and hot sauce and pour over vegetable mixture.
  4. 4Crumble bacon and sprinkle over entire pan.
  5. 5Cook for 40 minutes at 350 °F (175 °C).
