  1. 1Preheat oven to 350 °F (175 °C).
  2. 2Cook bacon. While bacon is cooking dice potato and place on a cookie sheet in oven. Bake until soft or desire texture.
  3. 3Dice bacon and mix with potato in bowl. Whip eggs and milk together then add to bacon and potato.
  4. 4Pour mixture into muffin tins lined with paper baking cups for easy clean up.
  5. 5Bake for 30 minutes or until eggs are fully cooked.
