Country Ham Breakfast Casserole

This veggie packed casserole make tasty use of leftover ham.

  1. 1In a 9x9" glass dish, layer bread, 1/2 cup of the cheese, ham, mushrooms, pepper, celery, tomato and scallions. Sprinkle with remaining cheese.
  2. 2Mix milk and egg substitute together and pour over top. Top with bread crumbs.
  3. 3Refrigerate 4 to 6 hours or overnight.
  4. 4Preheat oven to 350 °F (175 °C).
  5. 5Bake for 45 to 60 minutes, or until knife inserted in center comes out clean.
  6. 6Slice into four pieces and serve.
