Spinach Egg Muffins
Healthy egg muffins loaded with grilled onions, mushrooms and spinach topped with some cheddar cheese.

- 1Pre-heat oven to 350 °F (175 °C).
- 2Beat eggs and milk in separate bowl. Add spices as wanted e.g. paprika, black pepper, garlic salt, and turmeric.
- 3Chop your spinach, onions, and mushrooms.
- 4Saute your onions.
- 5Spray muffin pan with baking spray. Fill each spot with spinach, onions, and mushrooms evenly. It will be about half way filled. Then pour your egg batter into each spot about 3/4 of the way.
- 6After about 15 minutes of baking, top with cheese and bake for a further 5-10 minutes.
