Ingredients
- 1 cup garbanzo beansNutrition
- 1 cup low sodium vegetable juiceNutrition
- 4 cups fiesta blend vegetablesNutrition
- 3 tbsps chili powderNutrition
- 1/2 tsp pepperNutrition
- 1 tsp saltNutrition
- 2 tbsps olive oilNutrition
- 1 clove garlicNutrition
- 1/4 cup chopped onionNutrition
- 1/2 cup chopped green pepperNutrition
- 1 medium zucchiniNutrition
- 1/2 cup chopped red pepperNutrition
- 8 oz turkey breastNutrition
- 28 oz canned tomatoesNutrition
- 1 cup kidney beansNutrition
- 1 cup pinto beansNutrition
Directions
- 1Heat olive oil in large pot.
- 2Sauté onion and garlic until tender, then add green and red peppers, zucchini (which has been chopped), and turkey breast (which has been previously cooked and cut up into bite-size pieces).
- 3Sauté for 2-3 minutes until tender.
- 4Add canned tomatoes and vegetable juice, stir and crush up whole tomatoes.
- 5Add all remaining ingredients, stir well and bring to boil.
- 6Cover, lower heat, and simmer for 1 hour.
