- 1Combine frozen corn, salsa, rice and ground beef adding salt and pepper to taste.
- 2Cut peppers in half and clean. Stuff mixture into pepper halves and place in a deep dish pan.
- 3Cover stuffed peppers with the can of crushed/diced tomatoes and bake in the oven for approx 45 minutes at 400 °F (200 °C).
- 4Note: this dish also works great in a crockpot.
