Directions

  1. 1Combine frozen corn, salsa, rice and ground beef adding salt and pepper to taste.
  2. 2Cut peppers in half and clean. Stuff mixture into pepper halves and place in a deep dish pan.
  3. 3Cover stuffed peppers with the can of crushed/diced tomatoes and bake in the oven for approx 45 minutes at 400 °F (200 °C).
  4. 4Note: this dish also works great in a crockpot.
